Asian Asparagus, Mushrooms and Onions
Recipe: Asian Asparagus, Mushrooms and Onions
Summary: I created this combination and put on many different roasted vegetables. This recipe calls for asparagus, mushrooms and onions but any combination of vegetables would work with this dressing.
- 2 garlic cloves, minced
- 1 tbsp minced ginger root or 1 tbsp ginger paste
- 3 tbs soy sauce
- 3 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 1 bunch of asperagus
- 1 container of fresh mushrooms (I use baby bella)
- 1 small sweet onion
- Olive Oil
- Clean asparagus and mushrooms, slice onion. Arrange on a baking sheet. Sprinkle with olive oil. Salt and pepper to taste. Mix with hands.
- Bake at 450 for 30 minutes. Mix up ingredients for dressing. Arrange vegetables on serving a platter and pour dressing over vegetables. Serve immediately or serve room temperature as desired.
