Asian Asparagus, Mushrroms and Onions

Recipe: Asian Asparagus, Mushrooms and Onions

Summary: I created this combination and put on many different roasted vegetables. This recipe calls for asparagus, mushrooms and onions but any combination of vegetables would work with this dressing.



  • 2 garlic cloves, minced
  • 1 tbsp minced ginger root or 1 tbsp ginger paste
  • 3 tbs soy sauce
  • 3 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 bunch of asperagus
  • 1 container of fresh mushrooms (I use baby bella)
  • 1 small sweet onion
  • Olive Oil
  • Salt
  • Pepper


  1. Clean asparagus and mushrooms, slice onion. Arrange on a baking sheet.  Sprinkle with olive oil. Salt and pepper to taste. Mix with hands.
  2. Bake at 450 for 30 minutes. Mix up ingredients for dressing. Arrange vegetables on serving a platter and pour dressing over vegetables. Serve immediately or serve room temperature as desired.
