Summary: We love the combination of Kale and Cabbage and when we spotted this recipe on Rawmazing with these two cruciferous veggies we had to give it a try. The mustard and cashew based dressing provides a unique, tangy taste that gets even better the longer it chills with the salad.



  • 3 bunches organic kale, de-stemmed and torn into bite sized pieces
  • 1/2 head red cabbage, chopped
  • 1/2 cup sliced scallions
  • 1 cup pumpkin seeds
  • 1 1/2 cup dried cranberries



  • 1/2 cup cashews
  • 3/4 cup water
  • 2 lemons, juice from
  • 2 tablespoons honey
  • 2 tablespoons dijon mustard
  • 1/4 cup extra virgin olive oil
  • Himalayan salt and pepper


  1. In large bowl, toss together all salad ingredients.
  2. Place all dressing ingredients in high-speed blender and blend until smooth.
  3. Pour dressing over salad and mix well.

Thanks for the recipe.  I love the idea of kale and cabbage together.  I use them to make a “coleslaw”, with grated carrots, onions, apple and a little mayonnaise & lemon juice.  Kale is a real powerhouse of nutrients that everyone should eat (if only I could get my kids to eat it).
