Lasagna Light
I’ve been making this lasagna recipe for years for a lighter version with all the flavor. I used to use ground turkey and dried herbs but now I use ground chicken with fresh herbs if I have them. Hope you enjoy this recipe.
Brown onion and ground chicken with a tsp of olive oil, drain. Add tomatoes, tomato paste, sugar, basil, oregano, garlic, parsley and Parmesan cheese. Heat thoroughly to combine flavors.
Spray 9 x 12 pan with non-stick cooking spray. Add 1/2 of the meat mixture to the bottom of the pan. Line the top with 4 lasagna noodles.
Add cottage cheese on top then add the other 4 lasagna noodles.
Put remaining meat mixture on top. Add mozzarella cheese to the top of the meat mixture. Cover with foil and put in a 350 degree oven for 1 hour.
Take foil off pan and cook an additional 15 minutes.

Ingredients
- 1 lb ground chicken (or turkey)
- 1/2 large onion
- 32 oz can crushed tomatoes
- 6 oz can tomato paste
- 1 Tbsp sugar
- 1/2 tsp dried basil or 1 1/2 tsp fresh
- 1/2 tsp dried oregano or 1 1/2 tsp fresh
- 2 garlic cloves, pressed
- 1/4 cup fresh flat leaf parsley
- 3 oz parmesan cheese
- 8 lasagna noodles, uncooked
- 24 oz small curd cottage cheese
- 8 oz mozzarella cheese, shredded
Instructions
