Roasted Green Beans with Garlic

This roasted green bean recipe can be a flavorful replacement for the traditional, high fat green bean casserole side dish. For the last couple of weeks, we’ve made this dish a few times and it’s fast becoming a favorite in the Healthy Midlife kitchen. It bursts with crunchy garlic flavor, while the parmesan cheese creates a textural counter balance to the pungent herbal taste. The lemon zest also comes through, adding life to the typically plain tasting green bean.

Recipe: Roasted Green Beans with Garlic

Ingredients

  • 1lb fresh green beans, rinsed well, ends trimmed
  • 8 cloves garlic
  • ¼ cup + 1tbsp extra virgin olive oil, divided
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • Salt and pepper to taste
  • 1/3 cup pine nuts
  • ¼ cup grated parmesan cheese
  • Chopped basil to taste
  • Chopped cilantro to taste

Instructions

  1. Preheat oven to 450 degrees. Put beans in large mixing bowl. Peel garlic and slice thinly lengthwise. Add garlic to green beans. Toss together with ¼ cup olive oil, lemon zest, salt and pepper.
  2. Spread on baking sheet and roast for 10 minutes.
  3. Stir and return to oven for another 15-20 minutes, until lightly browned.
  4. Meanwhile, toast pine nuts over low heat until lightly browned.
  5. Transfer beans to small serving platter, add lemon juice and remaining olive oil. Toss gently to coat. Sprinkle on parmesan cheese, pine nuts and chopped herbs. Serve hot or at room temperature.

Eating green beans can definitely add nutritional benefits to any healthy diet.As it is naturally low in calorie, , fat free,It is also rich in fiber and have good source of vitamin C as well as vitamin K, that  make a perfect nutrition food.I love eating it.
