I have a new love for quinoa and I've always liked roasting vegetables with a little salt pepper and olive oil. I decide to try to mix them together and found it to be a really good side dish. This can be a main meal for a vegetarian or vegan since quinoa is a good protein source. Hope you enjoy it!

Recipe: Roasted Vegetable Quinoa

Summary: This is a family favorite!

Ingredients

  • 3/4 cup quinoa
  • 2 1/4 cup vegetable broth
  • 1 cup eggplant, cubed
  • 1 cup zuccini, cubed
  • 1 cup summer squash, cubed
  • 1 cup onion, diced
  • 2 cloves garlic, chopped
  • 2 T olive oil

Instructions

  1. Dice vegetables into large dices. Put vegetables on cookie sheet. drizzle olive oil over vegetables and toss with hands. Roast at 450 degrees for approximately 30 minutes stirring once. In sauce pan, heat up vegetable broth. Add quinoa, Cover and cook approximately 20 minutes or until all liquid is absorbed. Toss together when completed. Add salt, pepper or parmesan cheese as desired.
